<p>When we were kids, getting up at 6am was only ok if it was to get to the ski hill early.  Most of the time there was a quick stop at the McDonalds on the way out of town to pick up egg mcmuffins (shamefully) and some juice to fill us up for a full day of skiing.  In Fernie, B.C. we found a breakfast snack that takes the &#8220;mcmuffin&#8221; to a whole new level.  </p>
<p><a href="http://bigbangbagels.com/">Big Bang Bagels</a> shares a location with the Just Pizza 2 for 1 shop in the heart of historic Fernie.  Their speciality is The Big Breakfast Banger, which is a mouth watering combination of a tasty Montreal style bagel with fried egg, cheddar cheese and ham (proper thick slices). Sure you could make it at home, but given the price ($4) and the quality of the ingredients why bother&#8230;sleep in an extra 15 minutes and pick one up on the way to the hill.</p>
<p>It&#8217;s nice to see a little shop that does something really well and word of mouth does the rest. </p>

<p>Blend all of the ingredients (except water).  Let the mixture sit for one hour.  Add the water, stir and start frying.</p>
<p>Stab a fork into the uncut end of a halved potato.  Dip it in oil and use it to coat the bottom of the pan.  Fry them just like pancakes&#8230;not too hot.</p>

<p>Heat the oven to 350 degrees. Butter a square pan (8 inches) or a round tart pan. Cream the butter and sugar together.  Then mix in the rest of the ingredients, except the jam. With your fingers press 2 cups of the mixture into the bottom of the pan. Ensure an even spread.  Using a spoon spread the jam on top of the crumble almost to the edge, then sprinkle the remaining crumb mixture over the top. ( I put chocolate on both sides&#8230;making it extra chocolatey!)<br />Mix eggs, milk and icing sugar and then dip sandwiches into egg mixture. Cook in a frying pan over medium heat until golden brown. Serve warm and dust with icing sugar.</p>

<p>In a separate bowl cut the butter and sugar together until the mixture is<br />

<p>Add eggs, orange peel, and orange juice all at once; stir just until mixture is evenly moist.</p>
<p>Fold in berries and spoon mixture into greased 8×4 pans.</p>
<p>Bake for 1 hour (or so), test with a toothpick.</p>

<p>Preheat the oven to 300F. Mix the oats, seeds and nuts in a large mixng bowl. Measure the oil into a measuring cup and swirl it around before pouring into bowl, make sure it goes all the way up the sides of the measuring cup. Then measure the honey in the same cup and put it in the bowl.  Mix the ingredients together and spread it on to a baking pan.  Bake for 30 minutes, make sure you give the mix a stir every 10 minutes or so that everything gets nice and toasty brown. When you remove the granola from the oven, put it back in the mixing bowl and add the raisins.  Stir it around and let it cool.  (Give it a stir in the bowl every once in a while so it doesn&#8217;t clump.)</p>

1 cup whole wheat flour 
¾ cup flax seed
¾ cup wheat bran  or oat bran (or combine as necessary)
1 tablespoon baking powder

1 1/2 cup of mashed banana (4-5 frozen and defrosted bananas)

<p><strong class="measure">1 cup</strong> whole wheat flour <strong class="measure"><br />
¾ cup</strong> flax seed<strong class="measure"><br />
¾ cup</strong> wheat bran  or oat bran (or combine as necessary)<strong class="measure"><br />
</strong><strong class="measure">1 tablespoon</strong> baking powder<strong class="measure"><br />
1 teaspoon</strong> baking soda<br />
1 1/2 cup of mashed banana (4-5 frozen and defrosted bananas) <strong class="measure"><br />
¾ cup</strong> brown sugar <strong class="measure"><br />
¾ cup</strong> buttermilk <strong class="measure"><br />
1</strong> beaten egg <strong class="measure"><br />
1 cup</strong> of raisins (add more if you want) or use blueberries as we did in the photo (if you were confused)</p>
<p>Mix all of the ingredients together. Mix until you have a smooth mixture and then fill your muffin trays.  Each little cup should be 2/3 full.  Use muffin papers if you want an easier clean-up.  Preheat the oven 400F and cook for 20-25 minutes.  Stick and tooth pick in a muffin and if nothing sticks to it when you pull it out the muffins are ready.</p>

<p>Breakfast for dinner, sometimes you just get a craving.</p>
<p>1 c. fresh blueberries<br />
1 beaten egg<br />
1 c. milk<br />
1 1/4 c. plain flour<br />
2 1/2 tsp. baking powder<br />
Pinch of sugar</p>
<p>Combine egg and milk. Sift dry ingredients and add to egg mixture, beat with a fork or a hand blender. Drop small rounds onto a large buttered frying pan or gridle, add a few blueberries to each pancake. Flip them over when the air bubbles pop on the top side. Add some bacon and some maple syrup to finish it off.</p>
