Blackberry bars

This is normally a raspberry jam recipe but we substituted some of our blackberry jam that we made this summer. Although it was tough for me to part with almost a cup of precious jam, it was worth the sacrifice. I would imagine that this recipe would also taste good with a normal shortbread crust…we are getting close to Christmas.

- ½ cup butter, soft
- ½ cup light brown sugar
- 1 cup flour
- ¼ teaspoon baking soda
- ⅛ teaspoon salt
- 1 cup rolled oats
- ¾ cup blackberry jam
Heat the oven to 350 degrees. Butter a square pan (8 inches) or a round tart pan. Cream the butter and sugar together. Then mix in the rest of the ingredients, except the jam. With your fingers press 2 cups of the mixture into the bottom of the pan. Ensure an even spread. Using a spoon spread the jam on top of the crumble almost to the edge, then sprinkle the remaining crumb mixture over the top. Bake 35 to 40 minutes (until the oats on top turn golden brown) and cool on a rack. Edited from Cooks.com

I really like oatmeal on winter mornings.Add some fresh fruit is a treat.
I need to make these bars to have on hand for a snack.

Oh man, does that ever look good! I love jam bars, but I haven’t had one in forever. I bet your homemade jam was just amazing. I’m really enjoying your blog, by the way. Glad I found it!

Recipe was exactly what I was looking for – something with blackberries that didn’t need eggs (I’m almost out). A wonderful taste of summer with memories of picking wild blackberries among the briers. Thanks.
