Cranberry bread
November 4th, 2008 | Written by jfolkmann | Topic: Breakfast, DessertIt’s a bit crumbly, but so delicious. Great for breakfast with a glass of orange juice and an espresso. There is probably too much sugar and butter to call it healthy…but when the tangy little cranberries pop in your mouth you won’t really care. Promise.
I’ve adapted this recipe from Obscene Cuisine by adding wholewheat flour (and changing some of the process).

- 2 loaves
- 3 cups whole wheat flour
- 1 ½ cups sugar
- 2 ¼ teaspoons baking powder
- 1 ½ teaspoon salt
- ¾ teaspoon baking soda
- ¾ cup butter
- 2 eggs, beaten
- 1 ½ teaspoons orange peel, grated
- 1 ⅛ cups orange juice
- 3 cups fresh cranberries, chopped
Preheat your oven to 350F.
Sift flour, baking powder, salt, and baking soda into large bowl.
In a separate bowl cut the butter and sugar together until the mixture is
crumbly. Then add to the other dry ingredients and mix together.
Add eggs, orange peel, and orange juice all at once; stir just until mixture is evenly moist.
Fold in berries and spoon mixture into greased 8×4 pans.
Bake for 1 hour (or so), test with a toothpick.

I love this! Cranberries are good for so much more than just sauce! Glad someone else appreciates them
