Tarragon scrambled ostrich egg
September 8th, 2008 | Written by jfolkmann | Topic: MainWhen you need to serve a bunch of people for breakfast, you could buy a couple of dozen eggs…or you could buy just one Ostrich egg. Our local ostrich breeder called me on Friday night to let me know that her birds had laid 6 eggs during the week and she would save one for me if I was able to come pick it up at her market stall. She didn’t have to ask twice! We invited the in-laws over for breakfast and made this simple recipe. (Unfortunately scrambled eggs don’t take very pretty photos, so I only have the before shot.)

- 1 ostrich egg
- 6 tsp tarragon, (fresh and diced)
- 3 tablespoons of butter
1. Beat the egg.
2. Pass the beaten egg through a sieve to remove any of the fatty chunks that seem to clump up when the egg is cooked.
3. Add the tarragon and beat again. Season with salt and pepper.
2. Melt the butter in the pan. Add the egg, cook over a medium head and stir constantly until the egg scrambles.

Holy moly: One egg serves 10? I never realized ostrich eggs were that big.
