Artichoke hummous

It’s a bit like chickpea hummous but much more green. Thanks to Panera Bread for the recipe.

Ingredients
  • 1 15oz can artichoke hearts, drained and rinsed
  • 1 cup coarsely chopped flat-leaf parsley
  • zest of 1 lemon, use a rasp
  • 2 garlic cloves
  • ½ cup extra-virgin olive oil
  • ½ cup shredded Parmesan cheese
Preparation

Put the whole lot into a blender and blend until it’s really smooth. Place a spoonful onto crostini (small toast) and enjoy.
