Artichoke hummous

- 1 15oz can artichoke hearts, drained and rinsed
- 1 cup coarsely chopped flat-leaf parsley
- zest of 1 lemon, use a rasp
- 2 garlic cloves
- ½ cup extra-virgin olive oil
- ½ cup shredded Parmesan cheese
Put the whole lot into a blender and blend until it’s really smooth. Place a spoonful onto crostini (small toast) and enjoy.
