BBQ pork ribs

New BBQ = tons of fun! I’ve forgotten how many of my favourite recipes are BBQ dependant. It will be a while before I touch the stove again.

Pork

Ingredients
  • 2 racks of pork ribs
  • Paprika
  • Pepper
  • Salt
Preparation

Dust both sides of each of the racks of ribs with the spices and rub them into the meat. Put the pork on the grill for about 20 minutes (depending on thickness).

  2. You’ll need to cook them a lot longer than that. Ribs have a ton of connective tissue that needs 4 to 6 hours of cooking over 225 to 275 degree heat. Preferably wood smoke as well. You could parboil them for 45 to 1 hour and then grill them for 20 minutes but then they’d be mealy and you’ve wasted your money.


  3. Thomas,you’re absolutely right for a slow roasted fall off the bone meat your instructions are the way to go. However, with a really good cut of meat (more meat, around the rib) you can cook them just like you would a steak on the BBQ. This doesn’t yield fall off the bone meat, but it’s just as tasty. We do them like this all the time and have never had any complaints.

    I’ve got a good recipe for fall off the bone ribs as well, perhaps I should put that one up as another option.

    Here’s something different.

    Superb Lamb Kebab Recipes

    Ingredients

    * Sea salt and fresh black pepper
    * 8 cloves of garlic, crushed
    * ½ pint red wine
    * 4 tbsps walnut oil
    * 6 tbsps extra virgin olive oil
    * 12 tbsps fresh basil leaves, chopped
    * 12 medium red onions, finely chopped
    * 2 medium pineapples
    * 12 corncobs, each cut in half
    * 5 lbs leg of lamb, boned

    Directions

    Cube the lamb and pineapples into 1-inch pieces. Except for the corn, combine the rest of the ingredients as a marinade. Mix the meat with the marinade and refrigerate for a day. Slide the corn, pineapple and lamb onto bamboo skewers. Grease your grill and cook on high for 10 to 15 minutes. Brush it with the marinade as it cooks and turn it often.
