Peach Cake
July 19th, 2008 | Written by jfolkmann | Topic: DessertThis is a very nice dessert to make if you’re in a hurry. The cake bit is a nice base to add all sorts of fruit, plums, apples, apricots etc. Thanks to Bakerina for the recipe.
1 stick (4 ounces) unsalted butter
1 cup sugar
1 tsp vanilla extract
2 large eggs
1 cup of all purpose flour
3-4 peaches, washed, stones removed and halved
Preheat oven to 350 degrees F (Gas Mark 4). Beat together the butter and sugar until the butter is “white and fluffy”. Add the eggs and beat until the mixture is nice and creamy. Add in the vanilla and the flour and mix until smooth and all of the flour has been absorbed. Spread the mixture evenly in a spring form pan. Press in the peach halves cut side down into the batter. Bake for 45- 50 minutes, until the top of the cake is a deep golden brown and the peaches have almost been covered by the cake. When the cake is firm to the touch it’s done.
