Roasted almond brittle

3 cups sugar
1 cup corn syrup
1/2 cup water
1/4 cup butter
3 cups sliced almonds (roasted)
1 1/2 teaspoons baking soda (sifted)
Butter two large baking sheets and set aside.
In a pan heat sugar, corn syrup, water and butter over medium-high heat until the mixture boils. Reduce heat to medium-low stirring occasionally until the mixture reaches 275F on a candy thermometer (soft crack stage).
Stir in nuts and continue cooking over a medium-low heat stirring regularily until thermometer reads 295F (hard crack stage).
Remove sauce pan from heat and quickly sprinkle the baking soda over the mixture stirring constantly, the mixture will foam making the brittle porous. Immediately pour on to baking sheets. Use two forks to lift and pull the brittle as it cools. Cool completely, break into pieces and store tightly covered.
