Granola
April 28th, 2008 | Written by jfolkmann | Topic: BreakfastFor some strange reason I woke up this morning craving granola (I’m turning hippy or something), so i made my own.
2 cups old fashion rolled oats (not the instant kind)
1/2 cup sunflower seeds
1/2 cup unsalted peanuts or almonds1/2 cup raisins
1 cup raisins
scant 1/4 cup cooking oil (don’t use olive oil)
1/2 cup honey
Preheat the oven to 300F. Mix the oats, seeds and nuts in a large mixng bowl. Measure the oil into a measuring cup and swirl it around before pouring into bowl, make sure it goes all the way up the sides of the measuring cup. Then measure the honey in the same cup and put it in the bowl. Mix the ingredients together and spread it on to a baking pan. Bake for 30 minutes, make sure you give the mix a stir every 10 minutes or so that everything gets nice and toasty brown. When you remove the granola from the oven, put it back in the mixing bowl and add the raisins. Stir it around and let it cool. (Give it a stir in the bowl every once in a while so it doesn’t clump.)
