Great breakfast muffins, serve with some boiled eggs and a fruit salad for a quick healthy start to the day.
1 cup whole wheat flour
¾ cup flax seed
¾ cup wheat bran or oat bran (or combine as necessary)
1 tablespoon baking powder
1 teaspoon baking soda
1 1/2 cup of mashed banana (4-5 frozen and defrosted bananas)
¾ cup brown sugar
¾ cup buttermilk
1 beaten egg
1 cup of raisins (add more if you want) or use blueberries as we did in the photo (if you were confused)
Mix all of the ingredients together. Mix until you have a smooth mixture and then fill your muffin trays. Each little cup should be 2/3 full. Use muffin papers if you want an easier clean-up. Preheat the oven 400F and cook for 20-25 minutes. Stick and tooth pick in a muffin and if nothing sticks to it when you pull it out the muffins are ready.

Mention bran to me; and the toilet calls.
I used to feed my rabbits on it when a child.
Stay cool is my golden rule. Watch the daisies grow.
