Roast loin of pork with asiago cheese

Ok, so the picture doesn’t really do it justice, but this dish is so very tasty.
1 Pork loin
Olive oil
Pepper
Salt
1 cup of bread crumbs
1/2 cup of asiago cheese
1/2 cup of parsley
Preheat your oven to 375F. Butterfly your porkloin be careful not to cut it all the way through. Place the loins on a cutting board and cover with parchement paper. With a mallet or rolling pin, beat the loin until it’s flat as a pancake. Once you’ve got your pork loin as thin as possible lay it out flat, and drizzle olive oil on top. Rub in the olive oil making sure to cover the whole loin. Season both sides and then spinkle your parsley, breadcrumbs and cheese on one side. Don’t put too much in the middle otherwise you won’t be able to roll it, but try to cover most of the loin up to the edges. Roll it up lengthwise and place it on a baking tray. Roast the rolled loin for 30 minutes. Serve it up with your favourite veggies. I still haven’t come up with a good sauce for this…so applesauce works fairly well.
