Snapper en papillote

This is a really simple idea that makes a great dinner party meal. There is nothing better than opening the parchment with a ton of fanfare!

4 fillets of snapper
1 small bunch of fresh coriander
1 lime (just take the zest)
salt
pepper
2 knobs of butter (about a tablespoon  for each knob)
Parchment paper

Preheat oven to 375F degrees. Cut 2 large squares of parchment paper about 12 inches by 12 inches. Place 2 fillets of snapper in the middle of each bit of paper. Season fish with salt, pepper, fresh coriander, lime zest, and place a small knob of butter on top.

Fold parchment squares in half until the edges touch. Starting at a corner and working in one direction, fold and overlap the edges. Crimp the edges as you go, it doesn’t have to be pretty it just has to keep the liquid inside the package. Place parchment packets on a baking sheet and cook in preheated oven for 20 minutes. Slide the fish onto a dinner plate and cut open each package (be careful not not to burn yourself on the steam).
